Sugar is a misunderstood term. It can mean any number of compounds, each with somewhat unique properties and biochemical consequences. The most common forms of sugar we all encounter in our diets are fructose, sucrose, glucose, and lactose. Fructose is the sugar found in fruit. Sucrose is table sugar (it is made of one fructose molecule and one glucose molecule). Glucose is the standard biological fuel. Lactose is the sugar in milk.
The two problem children are sucrose and, especially, fructose (particularly high fructose corn syrup (HFCS)).
Sucrose has a massive effect on insulin levels, because it is half glucose, causing them to spike though the roof and go to work preventing fat usage and reeking havoc though shrinking of cholesterol molecules and calcification of arterial linings.
Fructose has no effect on insulin. But the only place in the body where fructose can be metabolized is the liver. The term for a substance that can only be processed by the liver, producing harmful substrates and byproducts…is poison.

What about lactose? Well, that’s not as bad of a sugar. It doesn’t have quite the same effect on insulin or other systemic responses, but, some people have immense difficulty digesting this particular sugar…which is why they are lactose intolerant. Lactose levels are highest in skim, 1%, and 2% milk, and non-fat dairy. The presence of high levels of fat in heavy whipping cream, sour cream, Greek yogurt (unsweet), cream cheese, and other cheeses (not American or Velveeta) negates any negative effects of lactose for the vast majority of Ketovangelists.
An interesting side note to this is that recent studies have shown that sugar stimulates the same parts of the brain has heavy narcotics like cocaine, heroine, and meth. It really is an addictive substance.
I should know, I was hooked on it for over 30 years.
